Every Tuesday afternoon for the past 5 years my mom has hosted a bible study at our house. I made this strawberry/blueberry poundcake with cream cheese icing for them this week and they LOVED it. Usually they don’t eat much but it was gone, so I’m assuming they enjoyed it. The recipe makes 2 loaf cakes (which I did with this one) or one bundt cake. If you just want to make one loaf, half the recipe. Also, I’ve found that this cake bakes better when you let your cream cheese, butter, & eggs get to room temperature before you start. Anyways, here’s the recipe!

Verry Berry Pound Cake

Very Berry Pound Cake

3 sticks butter (softened)
1 8oz. package cream cheese
3 cups sugar
3 cups flour
6 eggs
1 tsp. vanilla
1 cup strawberries
1/2 cup blueberries
for frosting…
4 oz. cream cheese
1/2 stick butter
1 cup powdered sugar
3 tbsp. milk

  • Pre-heat oven @325 for bundt, 300 for loaf
  • In a mixer, cream together the cream cheese & butter
  • Add sugar, then eggs, then flour (do not overbeat!)
  • Add vanilla
  • Put in greased & lined loaf or greased & floured bundt pan
  • Put berries on top & slightly poke them down with a knife
  • Bake for about 45 mins if loaf, and 75 mins if bundt (to check: stick toothpick in & if it comes out clean, it’s done)
  • While cake is cooling, mix together all icing ingredients until creamy
  • Spoon onto warm cake & top with berries
